In our business, before the dough, there's the grain.
From French durum wheat, we obtain a superior quality semolina, essential for a firm dough and perfect consistency! For more original and unique recipes, and for nutritional contributions adapted to your needs, we create various specialties, notably based on einkorn, buckwheat, chestnut, or even legumes.
And because innovation and curiosity are part of our DNA, year after year we test specific cereals and ingredients (Bordeaux red wheat, Khorasan wheat, rice, malt spent grains) to enrich our future product lines.
The Pasta Maker's Touch
Laminating or drawing: the pasta maker chooses the right technique to give each pasta its shape and texture. For some shapes, bronze dies provide a natural roughness, ideal for holding sauce.
For the pasta maker, everything is about touch, sight, and repetition. Our pasta is then dried at low temperatures and for a long time to preserve flavors and nutritional qualities.
Each recipe has its own pasta
Two methods, two textures:
- Rolled pasta (cooks in 2-4 minutes), thin and light in the mouth, perfect for a quick dish without sacrificing quality.
- Extruded pasta (cooks in 6-8 minutes), a firmer texture and more satisfying chew, ideal for hearty dishes.
